How long will my cake last?

Generally once a cake is cut, it will stay fresh for 3-4 days. Keeping it in the fridge overnight will make it last longer.

If your cake includes any fresh ingredients as decorations (like fruit, macarons, biscuits), these will start turning after 1-2 days.

If you're wanting to keep your cake for a much longer period of time, they can be fully frozen for up to 3 months. Simply pop your cake into the freezer and take it out 24 hours before you want to enjoy it. I recommend slowly defrosting by putting it in the fridge for the first 12 hours, then taking it out the fridge for the final 12 hours. You will notice some moisture appear on the outside of the cake. This is very normal and will evaporate eventually.

How do I store my cake?

Generally cakes are absolutely fine to be left at room temperature but this is all dependant on the outside temperature at the time. In the summer I do recommend keeping your cake in the fridge until a few hours before eating, however in cooler weather this will not be necessary. Taking the cake out the fridge and letting it get up to room temperature before eating is important as it allows the flavours to fully develop and for the texture to soften.
